Ma chambre à Saint-Amour

The Chefs

Jonathan Gomes Brandao, Chef

Marvin Brandao, Pastry Chef

and their supporting Chefs Jean-Charles Guillas et Panzo Domingo

JONATHAN has become the Associate Chef for dinners under the stars and we are delighted!

Originally from Burgundy, Jonathan grew up in a family passionate about gastronomy. Trained at the age of 15, he cut his teeth in Michelin-starred restaurants in France before working internationally, notably in New Zealand. Guided by excellence, he develops modern, light and eco-responsible cuisine, mixing cultures and creativity. After 15 years of experience, he returned to his roots to become an owner, with a rich culinary background.

Marvin Brandao, exceptional pastry chef, discovered his passion in the family restaurant in Beaujolais before training with Joël Noyerie, then in prestigious houses like Sève in Lyon and the Beau-Rivage Palace with Anne-Sophie Pic. After contributing to the creation of a starred dessert restaurant at the K2 Palace in Courchevel and working in palaces such as the Shangri-La and the George V, he opened ALMA by Marvin Brandao in Lyon with his partner Alice de Oliveira. This boutique, a symbol of their commitment to responsible pastry, earned him the title of Pastry Chef of the Year in 2023.

THE WINEMAKERS

Filipe Roque 063023 IMG_5878.jpg

The dinner is once again built around local and seasonal products but also and especially around the wines of the Cru Saint-Amour...

This year we propose to discover the wines in two times:

the time of a visit of a particular domain (two sessions will be organized on Friday and Saturday) and the time of a dinner.

The Saint-Amour cru, the smallest of the Beaujolais crus, is born in a vineyard almost exclusively located in Saône et Loire.

If you do not know it yet, you will discover balanced wines, with gamay grape variety, a ruby color and aromas of kirsch, spices and reseda, a tender and harmonious body.

Come and discover the area, the winemakers, the wines and the stories of the men and women who produce this wine with love!
